Production of our beer

Ejection

At the beginning of the actual brewing process, the malt is ground and then mixed with water. At this stage, an enzyme starts to work to create the correct pH (acidity) of the mash.
The mixture and quantity of malts used lays the basis for the character, colour and degree of the finished beer.

Steaming

Steaming is heating the liner to 51°C, at this temperature the proteins are broken down.

Rumbling

During the process, we pump parts of the work, which are heated to so-called sugar-forming temperatures of 60 to 65°C and 70 to 75°C. During which the enzymes that break down starches into sugars are activated. Perfect sugaring is detected by the iodine test and the mash is then boiled. In the case of two mashes, the process is repeated.

Cross-cutting

The purpose of scezing is to separate the insoluble parts of the plough, the so called churn, from the clear wort, and then to sweeten the residual sugars from the churn with hot water. This produces a sweet liquid called wort.

Hop Brewer

Hop brewing is a process whereby the wort is brought to a boil for a minimum of 90 minutes. During this time, an important raw material is added to the wort - granulated hops. The wort becomes wort.
Each type of our beer is hopped in several batches from Czech hop varieties. The highest proportion of a given variety determines the character of the beer and gives it its name. After the end of the hop brewing process, the wort is pumped into a whirlpool vat where the hop lees settle and the wort is cooled to a fermentation temperature of 7 to 9°C.

Main fermentation

The main fermentation takes place in open stainless steel vats on the fermenter. Boiling yeasts added to the aerated wort feed on the sugars, producing alcohol and carbon dioxide.
After the fermentation stage is reached, a young beer is produced.

Docking

Fermentation takes place in closed tanks. The beer is naturally saturated with carbon dioxide, which has nowhere to escape.
As the beer matures, it becomes fuller - bready. The flavour mellows and rounds out.

Bottling into kegs barrels and PET bottles

The finished beer is bottled into kegs and PET bottles.
